Mood Boosting Adaptogenic Mushroom Brownies

I promise you these brownies really are super simple to make — and they are delicious plus packed with nutritional goodness.

With an underlining hint of a mushroom blend featuring Chaga, Cordyceps and Lions Mane these mood elevating brownies are chewy, moist and packed with a rich chocolate flavor. Mushrooms and chocolate are the perfect duo plus they are the perfect mood boosting and energy boosting treat.

Recipe:

Serves: 6 mini brownies

Main Ingredients:

  • 1 cup (100g) ground almonds
  • 1 cup (100g) organic dark chocolate
  • 1/4 cup organic coconut oil
  • 2 tbsp lions mane
  • 2 tbsp chaga
  • 2 tbsp cordyceps
  • 3 tbsp stevia or monk fruit maple syrup
  • 1 tbsp chia seeds + 1 tbsp ground flax seed + 5 tbsp water
  • 1 tsp pure vanilla essence
  • 1 tsp aluminum-free baking powder

Method:

Place all dry ingredients in one bowl and combine. Then, place all wet ingredients in another bowl and combine. Mix wet and dry ingredients and fold gently to combine — try to avoid over mixing. Transfer to silicone molds or pan and bake at 160C for around 25-30 minutes. Remove from oven and allow to cool before removing. ENJOY!
