My superfood protein cookies are one of my favorite weekend breakfasts! Yup — you heard that right. Cookies for breakfast!
I am not one of those morning people who have to workout on an empty stomach. I train fasted a couple days per week to stimulate my body with a change from "food first" but I prefer to eat breakfast or, on busy mornings, enjoy a "grab n go snack" before my sweat. My semi-sweet and savory superfood breakfast cookies are the answer. And they make awesome go-to snacks anywhere, any-time! Loaded with complex carbs, protein, healthy fats, superfoods and antioxidants it is a cookie you can feel good about!
INGREDIENTS:
- 1 cup gluten-free rolled oats
- 1 scoop organic whey powder
- 1/2 cup oat flour
- 1 Tbsp organic Maca
- 1 large mashed banana
- 3 tbsp melted coconut oil
- 1 tbsp raw almond butter
- 2 tbsp stevia maple syrup
- 3 tbsp almond milk (or preferred milk)
- 1/3 cup dried organic goji berries
- 1/2 cup of raw unsalted pumpkin seeds
- 1/4 cup ground flaxseeds
- 1 tbsp chia seeds
- 1 tsp cinnamon
- 1/2 tsp baking powder
- 1/4 tsp salt
Bonus superfood addition: add 1 Tbsp organic mushroom powder to support mental clarity, energy and immune support.
INSTRUCTIONS:
Hand mix. Divides into 15 small cookies. Cook in oven at 325F for approximately 15 minutes.
